INKA is a new award-winning establishment offering our guests a unique Japanese-Peruvian cuisine, with a new beautifully presented fit-out full of premium finishes, a prime location in an increasingly busy area and a passionate support team, this new venue aims to be the next Canberra institution.
INKA is looking for various talented Chefs, from Sous Chef to Head Chef ranks, who will inspire the team towards culinary excellence through creativity, passion, and professionalism. We require candidates with excellent knowledge of Japanese cuisine and the art of nigiri and sashimi preparation backed up with the culinary experience to develop new and exciting dishes.
As a Sous Chef, your role will be to create and execute an immaculate menu that will complement the high-level offering – the exquisite cocktails and our superb wine list.
As the Head Chef, you will lead the kitchen and be an important part of the complete picture that will set new standards in the Canberra dining landscape.

- Comprehensive experience in creating, costing, and executing an innovative menu
- Prepare Japanese cuisine with passion, skill, and consistency
- Have the culinary experience to craft new combinations and customise dishes using fusion techniques
- Leadership skills to manage the kitchen
- Actively participate in personnel management, recruitment, and performance reviews
- Implement strategies to minimise waste and optimise usage of produce
- Lead from the front to deliver an immaculate guest dining experience
- Oversee food safety, HACCAP, WH&S and sanitation in the kitchen
- Applicable trade qualifications and accreditations
- Hospitality Industry professionalism with a track record of quality training
- A leader with a high level of attention to detail and food presentation skills
- Flexible availability across a 7 day a week operation
- Good communication skills

This is a full-time position with an attractive salary package for the right candidate. Sous Chef salary range will be $70,000 to 85,000. Head Chef salary range will be $90,000 to $110,000.
