Senior kitchen role, to be responsible for managing the kitchen operations of our busy restaurant including leading the entire kitchen staff.
Main tasks and responsibilities to include:
- Oversee and manage the entire kitchen operations
- Manage, lead and motivate the entire kitchen team
- Prepare, cook and serve a variety of dishes from our menu
- Plan and draft menus and daily specials according to seasonal produce available
- Ensure all raw products and prepared dishes are of a high quality and standard
- Oversee the stock-take procedures and ensure that appropriate food supply orders are made on time
- Ensure food is stored at appropriate temperatures and by proper methods for preservation and freshness
- Ensure food allergies and intolerances are accommodated for and properly managed
- Discuss and deal with any food preparation issues that may arise with management as well as kitchen and wait staff
- Be responsible for the hiring and selection of new kitchen staff
- Train and supervise kitchen staff, including demonstrating specific cooking techniques and provide guidance on cooking procedures
- Deal with any staff disciplinary issues
- Ensure that appropriate hygiene, food safety and OH&S standards are met
- Liaise directly with customers when required
- Participate in business planning meetings with other management and company directors
- Assist in preparing a budget and be responsible for ensuring that food and labour costs come within that budget
- Review kitchen sales and develop and implement measures to ensure targets are met
- Preferably experience in a head chef role;
- Good knowledge of portion control;
- Good communication ability in English;
- Recent experience in a busy food environment;
- Experience in plating and serving dishes;
- High standard of personal presentation and hygiene.
Otherwise 3 years additional full time work experience may be considered in lieu of a formal qualification.
