Senior kitchen role, to be responsible for managing the kitchen operations of our busy restaurant including the preparation and service of a variety of dishes, and to be delegated with the charge and control of the wood-fired pizza oven.
Main tasks and responsibilities to include:
- Oversee and manage the entire kitchen operations, in particular when the head chef is not rostered on
- Prepare, maintain and be in charge of the operations of the wood-fired pizza oven
- Prepare, cook and serve a variety of dishes from our menu; in particular our famous wood-fired pizzas
- Plan and draft menus and daily specials according to seasonal produce available
- Develop new pizza toppings, recipes and specials
- Ensure all raw products and prepared dishes are of a high quality and standard
- Oversee the stock-take procedures and ensure that appropriate food supply orders are made on time
- Ensure food is stored at appropriate temperatures and by proper methods for preservation and freshness
- Ensure food allergies and intolerances are accommodated for and properly managed
- Discuss any food preparation issues that may arise with management as well as kitchen and wait staff
- Attend meeting regarding budgetary issues, and help to ensure that food and labour costs come within that budget
- Review kitchen sales, and help to develop and implement measures to ensure targets are met
- Assist in the process of hiring new kitchen staff
- Train and supervise kitchen staff, including demonstrating specific cooking techniques and provide guidance on cooking procedures
- Provide specific training and supervision to other kitchen staff operating the wood-fired pizza oven
- Ensure that appropriate hygiene, food safety and OH&S standards are met
- Liaise directly with customers when required
- Preferably will have experience with wood fired pizza ovens;
- Good knowledge of portion control;
- Good communication ability in English;
- Recent experience in a busy food environment;
- Experience in plating and serving dishes;
- High standard of personal presentation and hygiene.
3 years additional full time work experience may be considered in lieu of a formal qualification.
