High Volume Cocktail Bar and Restaurant
Merlino & Co. – Kittyhawk
We are looking for an experienced Restaurant Manager to assist in operations of a high-volume, award-winning venue that is part of one of Sydney’s leading hospitality groups. We are seeking an individual who is passionate about hospitality as a career, is customer service focused, displays great leadership and has the ambition to grow with us as a group.
Kittyhawk is a dynamic and large venue, and we are searching for someone with experience in large venue operations and departments.
About Us:
We are a high-volume cocktail bar and restaurant that also hosts a dynamic events department. This sees us as host to a variety of scenarios each week.
The venue was designed around the Liberation of Paris in 1944 and has been nominated for multiple awards. We bring together an old-world charm with a modern and delicious food and beverage offering.
Our bar is strongly spirit focused, with a concentration on North American Whisky and Rum – as reflected in our seasonal cocktail lists. Our team of professional bartenders deliver world class cocktails and quality service but know when to turn the place into a party when times suit.
Spirits aside, we also boast a comprehensive wine list encompassing French, Australian, and Natural wines in what we consider to be the best of the best.
This is all designed to go hand-in-hand with our modern French food offerings. We focus on using local produce of the highest quality to create an unpretentious dining atmosphere. The menu changes seasonally using sustainable produce as much as possible. The chefs make as much as possible in house which flows through to the end product.
We are an amazingly tight knit team of passionate individuals who live and breathe hospitality and push ourselves daily to constantly provide top level customer service and products.
Kittyhawk is part of a larger company called Merlino & Co., which also operates The Lobo and Big Poppas.
The Role:
Be a direct support to our current management team to help manage the day-to-day operations of the venue.
Ensure that the level of customer service is consistently in line with our brand standards. Liaise with customers and the employment team to ensure all feedback is taken on board.
Take and manage reservations, greet guests, take orders.
Assist in leading and developing a strong and established FOH and BOH team. This includes recruiting, training and supervising all employees.
Plan and assist in new menu launches – preparing product costings according to budget, preparing execution timeline in conjunction with the other departments, train applicable staff.
Assist and implement stock control procedures, and regular inventory management.
Manage and plan for functions and events hosted throughout the year.
Ensure venue meets all OSHA requirements, and that our service meets all OLGR RSA requirements.
Required Skills and Attributes:
Have held a similar managerial position in a high-volume venue for a minimum of 3 years.
Ability to lead, manage, motivate, and develop staff.
Proven success driving revenue and profits.
Knowledge of quality food & beverage products.
Experience with management reporting, stock control, OHS & handling venue security concerns.
Strong organisational skills with the ability to think on your feet and multi-task. Self motivated, makes use of check lists and communication methods to manage own workload and give regular updates.

A passion for hospitality, leading from the front and developing relationships across all levels of the business.
Valid NSW RSA, and full working rights required.
