Buono Restaurant & Bar Pty Ltd is looking for a Sous Chef to work full-time (38-40hrs/week)
in our Parkdale gem, Buono Restaurant & Bar.
We are looking for a qualified, motivated, highly experienced Sous Chef to join our team of
passionate and dedicated kitchen staff, reporting to the Head Chef. Experience in cooking
Italian cuisine desirable.
Duties and Responsibilities:
Second in charge to the Head Chef in the kitchen
Preparing and cooking food
Supervising and monitoring all food preparation and presentation to ensure quality and
restaurant standards
Discussing food preparation issues with kitchen staff
Demonstrating techniques and advising on cooking procedures
Supervising, training, mentoring and managing junior kitchen staff
Working with the Head Chef to maintain kitchen organization, staff ability, and training
opportunities
Assisting Head Chef in planning menus and specials
Freezing and preserving food
Assisting in planning menus for special functions
Assisting in managing the food budget and labour costs
Managing food and product ordering by keeping detailed records and minimising waste,plus working with existing systems to improve waste reduction and manage budgetary concerns
Monitoring stock levels of kitchen supplies and ordering stock and supplies
Checking food deliveries for quality, correct temperature and quantities
Ensuring safe food storage and preservation in accordance with Food Safety Plan
Enforcing and following hygiene and OH&S regulations and procedures
Acting in place of and performing the duties of the Head Chef in the Head Chef's
absence
Must have minimum 3 years’ experience as Chef in a busy kitchen and some experience as Sous Chef desirable.
Must be a team player who can abide by company policy and go the extra mile when
required.
Salary $70,000-$80,000. Salary negotiable for the right candidate and level of experience.
