McLoughlin Butchers are looking for a qualified butcher / Smallgoods Maker that has at least 15 years experience in this field.The following are attributes we are looking for:
· Deboning and breaking down of beef, lamb and pork carcases.
· Trimming selected cuts of meat for display and tray packing.
· Cutting meat to specific specifications as requested by customer
· Preparing meat products for crumbing and value adding.
· Selecting and preparing meats in brines and curing salts to produce smallgoods.
· Good customer skills as you will be required to assist customer on the suitability and uses of cuts of meat.
Must be able to use the following equipment as these will be essential in the production of hams, sausages and continental smallgoods.
· Mincer / mixer machine to be able to grind, mix and mince meat products.
· Band saw
· Have sound knowledge of using a pickle injector to ensure correct cure and spices are injected in the selected meat products.
· Must be able to use an automatic sausage linker machine
· Have knowledge in being able to use different skins / casings to fill in sausage mixes into and also which are the best casings to use with regards making / smoking and cooking small goods.
· Must have sound knowledge in the using of smoking ovens to produce a wide range of smallgoods.
· knowledge on using a bowl cutter as experience is required for this machine to produce sausages / continental lines.
This is a full time position, 38 hours per week.
The salary range for this position is $70 000 - $75 000 depending on experience.
