About the role
We are seeking a passionate & talented Culinary Director & also Executive Chef to lead the busy kitchen operations across the hotel with a lifted mandate moving forward.
Both these roles will oversee the operational management of the Hotel's kitchen & will be fully responsible for developing the reputation of the hotel through the production of excellent quality food.

What will I be doing?
- Inspire your kitchen team, displaying exemplary behaviour at all times and a hands-on approach to leadership
- Encourage your team, using a variety of recognition materials & tools
- Be innovative, continually looking for ways to wow our guests & challenge the team to create exciting & contemporary menus
- Ensure the consistent production of high-quality food through all hotel food outlets
- Develop positive customer relations through interacting with our guests and being the face of the kitchen
- Develop sound & long-lasting relationship with our suppliers, ensuring a win-win scenario
- Encourage sound relationships based on trust with other departments in the hotel
- Manage department operations, including budgeting, forecasting, resource planning, food costs & waste management
- Manage all aspects of the kitchen including operational, quality & administrative functions
- Actively seek verbal feedback from customers on a regular basis & respond to all guest queries in a timely & efficient manner
- Ensure adequate resources are available according to business needs
- Control costs without compromising standards, improving gross profit margins & other departmental & financial targets
- Ensure team members have up-to-date knowledge of menu items, special promotions, functions & events
- Ensure that staffing levels are maintained to cover business demands
- Recruit, manage, train & develop the kitchen brigade, constantly building a highly engaged & productive team
- Comply with hotel security, fire regulations and all company & state health and safety & food safety legislation
- Ensure maintenance, hygiene & hazard issues are dealt with in a timely manner
- Be environmentally aware & constantly looking for ways to decrease our environmental footprint
What are we looking for?
- Previous kitchen leadership & management experience (preferably 5 years or more) in a full-service hotel of a similar size
- Substantial & successful history of excellent leadership, communication & stakeholder management skill
- Proven track record of successful kitchen operation through food cost & payroll management
- A creative approach to the production of high-quality food & menu planning
- Ability to multi-task & meet deadlines
- A current, valid, and relevant trade qualification (proof may be required)
- Proven ability to recruit, motivate, train & lead successful teams
- A degree-level qualification in a management-related field (advantageous)
