Reporting to our Chief Operating Officer this role will be pivotal in overseeing the portfolio of Restaurant operations. This role demands a strategic approach to enhance profitability, ensure consistent quality and standards and establish a positive and productive environment within which pathways and culture ensure attraction and retention of the best talent. You will assume responsibility for the success of Restaurant leaders through achievement of their financial and guest feedback targets, ultimately leading to the financial and reputational success of the portfolio as a whole.

Salter Brothers Hospitality currently operates 16 retreat hotels and estates; more than 20 restaurants and Bars; 8 Spa Anise spas and other wellness facilities; as well as Spicers Scenic Rim Trail, one of the largest ecotourism ventures in Queensland with 38 rooms over five campsites. There are plans for considerable growth in the near future. 

The role and key duties;  

  • Create, set and maintain the framework for our Restaurant and Bar performance that will empower onsite managers to meet and exceed budgeted financial results and guest feedback metrics; 
  • Prepare an annual training calendar for restaurants to enable excellence in service and product standards; 
  • Contribute to strategic conversations on technology and systems in collaboration with the Director of Innovation and Technology to maximise efficiency within operations and accuracy in reporting; 
  • Oversee procurement in restaurants working closely with the Group Procurement Manager and where suitable, manage key group supply relationships; 
  • Operate with high degree of autonomy and be effective under pressure. Take responsibility for outcomes across the Group and in specific areas of management; 
  • Compilation of annual calendar of Restaurant events in collaboration with onsite managers; 
  • In collaboration with the Director of People and Culture, identify talent, establish pathways and mobility to attract and retain the best talent;
  • Contributing to the budget planning process for each operation;
  • Implementing and managing robust plans to enable onsite teams to deliver financial results at or better than budgeted.
     

Essential criteria required to be considered; 

  • Minimum 5 year’s professional experience in a hospitality environment either in group Hotel operations, Hotel consulting or similar; 
  • Proven in-depth experience as Executive Chef and/or a General Manager of Restaurant and Bars;
  • Strong background from a luxury Hotel or hatted restaurant environment;
  • Sound knowledge of all aspects of a food and beverage operation;
  • Trade qualification in culinary arts and or BSc/BA in Business Administration or Hospitality; 
  • Experience in the workings of Hotel Management Agreements (HMAs);
  • Ability to uncover value-add and operational improvement opportunities in Hotel assets;
  • Knowledge and understanding of Hotel operations, industry’s legal rules and guidelines; 
  • Ability to analyse economic, lodging and geographic trends, and formulate sound supply and demand forecasts;
  • Strong communication and presentation skills – able to communicate clearly and concisely, both orally and in writing; 
  • Competent user of Microsoft Office programmes and Business Intelligence tools; 
  • Working knowledge of data analysis and performance/operation metrics.
