Tiwi Island Retreat (remote island located on the Tiwi Islands 120 north of Darwin) are currently seeking a motivated individual to join their team as a casual Kitchenhand in an exciting adventure resort. On a casual employment basis, you will be working in a remote island location in the NT in a fast-paced adventure holiday destination, Tiwi Island Retreat. You’ll be engaged with skill development, working under an experienced Head Chef and delivering exciting culinary results. Based on a seasonal contract (March to December), you will be working closely with the Head Chef and wider team on the island who will be teaching you the Tiwi way.

About You

Able to work productively and efficiently, this role suits a passionate Kitchenhand with a methodical approach. This position is responsible for cooking an a la carte breakfast (when rostered) with support from our Hosts and providing dish washing support when needed.

You’ll be a passionate individual offering your general knowledge of cooking to support the Head Chef. You’ll have the ability to learn from an experienced mentor and evolve in an energetic, professional culture of successful, goal-oriented team players.

This role is suitable for an experienced kitchenhand, who is a hard-working team player. You will demonstrate the ability and willingness to work in a remote tourism venture. You are willing to go the extra mile to provide the ultimate guest experience, but also priorities safety above all else as you continue to promote the safety culture amongst staff and guests.
 
The ideal candidate for this position will be inspired by local produce. Working in this kitchen will mean working closely with bush foods and preparing the absolute freshest native produce to guests. You’ll deliver delicious and exciting food, learning new culinary skills helping plan menus, rosters, ordering, and guiding your culinary journey to success.

Experience in fresh fish butchery, sashimi and shellfish preparation would be an advantage, but is not essential.

Job tasks and responsibilities (not limited to);

  • Managing food preparation for all meals and assisting the Head Chef
  • Managing lunch for guests and staff
  • Managing the kitchen in the Head Chefs absence
  • Prepare and cook breakfast when rostered for up to 42 guests at a time from an a la carte menu, under direction of the Head Chef
  • Assist the Head Chef with food preparation for dinner service
  • Support the Head Chef with plating and dish washing during lunch and dinner service
  • Adhere to culinary standards, recipes and regulations
  • Retrieve food items as requested by the Head Chef as well as lift, handle and store food deliveries from barges, planes or boats
  • Ensure working areas are kept clean including benchtops, floors, shelves, ovens and stovetops
  • Ability to deal with visitors in a professional, enthusiastic and friendly manner
  • Experience in a la carte cooking and an understanding of safe food handling requirements
  • Assemble and complete necessary checks prior to start of the day, including briefings and completing related paperwork
  • Maintain a neat and tidy appearance (uniforms clean and in good repair, neat, and proper OHS approved foot attire)
  • Genuine interest in the Tiwi Islands and Northern Territory, its history, its wildlife and/or a demonstrated ability to acquire related knowledge
  • Ability to take responsibility, work independently and as part of a team, solve problems, demonstrate initiative and respond quickly to issues that arise
  • Flexible, reliable and adaptable, with a willingness and ability to work flexible hours including weekends and evenings
  • Excellent personal presentation and hygiene standards
  • Demonstrated understanding of WHS practices and procedure
  • Good organisational and time management skills
  • Ability to work safely with minimal supervision but be able to take direction
  • Demonstrated ability or willingness to live and work in a remote environment
  • Work with the Head Chef and Manager to deliver exceptional guest experiences
  • Work with the Head Chef and Manager to deliver exceptional corporate bookings and events
  • Work with the Head Chef, guests and other retreat staff to understand allergy / special dietary requirements - ensuring food safety and availability for guests at all times 
  • Participate in cooking demonstrations (where required)
     

Skills and experience

As the ideal candidate for this role, you will possess the following skills;

  • Have experience in fast paced restaurant service, in room dining, canapé and a la carte venues 
  • Have culinary experience in events / functions 
  • Kitchenhand/cook experience in quality dining venue 
  • Hands on culinary experience with seafood and butchery of whole fish 
  • Experience working in a busy environment, be able to cope under pressure and work productively unsupervised  
  • Be creative and understand current industry trends
  • Have the ability to take direction from Head Chef
  • Be responsible for development, maintenance of the kitchen equipment and training leadership of island team members to cross train into supporting roles 
  • Possess excellent communication skills
  • Encourage a positive culture with both FOH and BOH team members
     

Essential Criteria

  • Experience as a kitchenhand in a similar environment
  • Current First Aid qualification
  • Current Responsible Service of Alcohol (RSA) certificate
