At Brass Monkey as the Larder Attendant, you are entrusted with the pivotal responsibility of ensuring meticulous kitchen preparation and flawless plating of food. Reporting directly to the Bar Manager, your primary focus is to maintain the highest standards of culinary excellence through precise execution of preparation tasks and artful presentation of dishes. Key Responsibilities:
Kitchen Preparation:
- Execute kitchen preparation tasks with unparalleled attention to detail, that can include washing, peeling, slicing, and dicing ingredients to exact specifications.
- Ensure precise measurement and portioning of ingredients in accordance with recipes and portion sizes, maintaining consistency in flavor and presentation.
- Prepare foundational components such as stocks, sauces, and dressings to perfection, adhering to established recipes and quality standards.
- Maintain immaculate cleanliness and organisation within prep areas, refrigerators, and storage spaces to uphold food safety protocols.
- Proactively anticipate kitchen needs and assist in inventory management to ensure sufficient stock levels of essential ingredients and supplies.
Plating and Presentation:
- Artfully plate dishes with meticulous attention to detail, showcasing culinary creations in a visually appealing and appetizing manner.
- Ensure that each plate meets the highest standards of presentation, including proper portioning, arrangement, and garnishing.
- Collaborate closely with kitchen colleagues to coordinate timing and execution for seamless plating and timely delivery of orders.
- Uphold consistency in plating techniques and presentation styles to enhance the overall dining experience for our guests.
- Remain attentive to special dietary requests and allergy considerations, ensuring accurate and safe preparation of customized dishes.
Dishwashing and General Support:
- Prioritise dishwashing responsibilities to maintain a steady supply of clean dishes, utensils, and equipment for kitchen and bar operations.
- Thoroughly wash, sanitise, and organise dishes, pots, pans, and utensils to meet stringent cleanliness standards.
- Assist in the general maintenance of kitchen cleanliness and organisation, including regular cleaning of work surfaces, equipment, and storage areas.
- Support kitchen colleagues as needed, demonstrating flexibility and teamwork in accomplishing shared goals and objectives.
Qualifications:
- Previous experience in a culinary environment, with a focus on kitchen preparation and plating, is highly preferred.
- Extensive knowledge of food safety and sanitation practices, with a commitment to upholding rigorous hygiene standards.
- Exceptional attention to detail and a keen eye for aesthetics, particularly in plating and presentation.
- Strong communication and collaboration skills, enabling effective coordination with kitchen colleagues and management.
- Ability to work autonomously and efficiently in a fast-paced kitchen environment, prioritizing tasks and adapting to changing priorities.
