The Role
- Buying of all wine
- Writing of by the glass, by the bottle, and cellar lists
- Stock and COGS budgeting and accountability
- Regular training of FOH team
- Restaurant service
Candidate requirements
- Proven experience in a similar role at a venue of equal calibre
- Professional qualification such as WSET, CMS or equivalent experience
- Knowledge of classic and contemporary wines, with a focus on Australia, France and Italy in particular
- Experience training and mentoring subordinates
- Ability to time-manage across the various demands of the role
- Good personality that works well with a medium sized team
- Flexibility with working hours as the venue trades 7 days and evenings
