Apprentice Retail Butcher

Alexander Downs is a family farming enterprise situated in the Hunter Valley, NSW. Our operations are spread across 4 locations and consist of farming, feed mill, meat wholesale, meat processing and Retail Butchers. At Alexander Downs, family values are at our core. We would not produce anything we wouldn't be happy to feed to our own families. We select the optimum livestock genetics for our production system, use animal welfare best practice and ensure environmental stewardship.Alexander Downs now has an exciting opportunity for an Apprentice Retail Butcher to join our team based in our newly refurbished retail shop "Scott's Hunter Prime Meats" located in Kurri Kurri, NSW.To be successful in this role, you will:

•Have good hand-eye coordination;

•Have an interest in meat and meat preparation and food in general;

•Have good knowledge of the product (where it comes from and the “story” behind it)

•Hold excellent personal hygiene and cleanliness;

•Possess a passion for customer service;

•Have creativity and a general awareness of how to present and display meat; and

•Be open to gaining experience in all facets of the trade.

What will you learn?

•How to cut, trim and shape standard cuts of meat to size;

•Identify various meat cuts;

•Prepare crumbed meats, marinating and seasoning;

•Pack and store products;

•Weighing meat into portion sizes;

•Operate machines to grind, mix, mince, cut, vacuum packed, etc...;

•Correct food preparation and handling, including cleaning; and

•Meat Retail and customer service.

What’s involved in gaining the trade?

•You will perform tasks of increasing complexity during the apprenticeship under the guidance of a qualified butcher;

•You will attend classes at a TAFE to learn the theory and application of the trade;and

•You will work and study under a contractual training agreement to complete and obtain your qualification.
