We are seeking a capable and motivated Catering & Food Services Supervisor to support the team at Parklea Correctional Centre.

The Catering & Food Services Supervisor is responsible for the daily operation and organisation of the onsite kitchen, including food orders and delivery, inmate work activities and schedules, inmate supervision, inmate training and mentoring and adherence to Food Safety Standards (ISO 22001).

The following key responsibilities are provided as a general guide in relation to the requirements and objectives of this position, including but not limited to:


•    Contribute to the technical oversight of the Catering and Food Services function across the Parklea Correctional Centre (PCC)
•    Responsible for the daily operation and organisation of the onsite kitchen, including food orders and delivery, inmate work activities and schedules, inmate supervision, inmate training and mentoring and adherence to Food Safety Standards (ISO 22001)
•    Provide experience, instruction, supervision, and support to inmates who are employed around Catering and Food Services
•    Ensure that nutritious and compliant Catering and Food Services are delivered to the Centre
•    Assist with improving the skills and work ethic of inmates, helping them to productively contribute to the operations of the Centre, whilst meeting MTC Australia’s targets and objectives
•    Cooperate and communicate effectively and in a pro-social manner with other staff members, inmates, visitors, and other stakeholders
•    Follow HACCP compliance and guidelines in all food handling and preparation areas.
•    Comply with food allergen management procedures
•    Responsible for ordering, tracking, receiving, and storing kitchen stock and deliveries.
•    Coordinate catering for internal events, including staff training days and conferences, it also supports catering provided through the onsite canteen
•    Support inmates to learn new skills to be able to prepare cook-chilled meals, pack breakfast ration packs and make fresh sandwiches and wraps
•    Work day-to-day operations of the kitchen as operationally required
•    Attend regular training and refresher sessions to maintain skills and qualifications including but not limited to cultural awareness, mental health, CPR and first aid
•    Model, mentor, coach and encourage pro-social behaviour in interpersonal interactions and negotiations
•    Prepare inmates to work towards employment opportunities within the community, after their release

Skills & Experience:
The following key experiences and skills are desirable in relation to this position and would include but not be limited to:


•    Demonstrated previous experience working in a similar role at a correctional centre, or within an institutional environment
•    Must hold a Certificate III (or above) in Commercial Cookery (or similar) or a Certificate III (or above) in Catering Operations (or similar)
•    Experience working as part of a multi-cultural and multi-disciplinary team (desirable)
•    Be socially responsible with the highest standards of personal honesty and integrity
•    Have previous experience working with Food Safety Standards and HACCP practices; and a working knowledge of them
•    Understand culturally appropriate food for a variety of cultures (desirable)
•    Hold a current Food Safety Certificate
•    Hold a current valid manual Australian driver’s licence
•    Hold a current Forklift licence (desirable)
•    Must obtain and maintain a First Aid accreditation, in the form of a current Statement of Attainment for HLTAID003 Provide First Aid
•    Must meet the physical requirements of the role and pass a functional fitness and health assessment; due to the demands of the role, applicants who consume alcohol excessively, abuse prescription medication or consume illicit substances are not suitable

Desirable qualifications:
•    Previous exposure to the requirements of the Food Safety Standards and HACCP practices; and a working knowledge of them. 
•    Demonstrated experience in managing a team of people, including staff support and mentoring skills.

•    Ability to operate in accordance with NSW Government laws and regulations
•    Ability to gain and retain all the police/security clearances required within our industry
•    Ability to pass any required health and medical assessments
•    Ability to visit and work within a correctional or regional processing centre
•    Proven rights to work in Australia
•    Willingness to undergo alcohol and drug testing as required of the business from time to time

The successful applicant will be subject to appropriate security clearances from New South Wales Police and Corrective Services New South Wales prior to appointment.
