Role Overview:

As the Chef Manager, your role is to oversee and efficiently manage the Catering and Food Services within the Aged Care facility. Your primary responsibility is to ensure the safe and high-quality provision of catering and food services to residents and guests. By effectively managing operations and adhering to quality standards, you play a crucial role in enhancing the dining experience and well-being of those we serve.

Key Responsibilities

• Prepare culturally and religiously appropriate meals for individual residents while adhering to budget constraints.
• Create specialised diets as per dietitian and guidelines, including texture-modified diets, high/low protein, gluten-free, or coeliac diets.
• Timely preparation and presentation of meals to maintain freshness, quality, and food safety standards.
• Ensure punctual meal delivery by coordinating efforts of chefs, weekend chefs, food services assistants, catering assistants, and carers while maintaining high quality.
• Assume the role of the lead professional in kitchen and dining areas, upholding exemplary professional conduct and driving continuous improvement.
• Organise kitchen staff schedules to ensure adequate staffing throughout the working day.
• Collaborate with the Hotel Services Manager and People & Culture Department for staff recruitment and orientation.
• Ensure catering and food services surpass the compliance requirements outlined in the Aged Care standards for accreditation.

Qualifications:

• Chef Trade Licence required
• Certificate IV Commercial Cookery
• Food Safety Supervisors( Australia Institute of Food Safety)
• Current DHS NDIS Worker Screening Check (essential)
• Current National Police Clearance (essential)
• Current Covid-19 Vaccinations (2 doses + 1 booster)
• Supervisory/frontline management qualification (desirable)

Skills & Experience:

• Previous experience in the preparation and delivery of meals within a similar environment
• Experience in preparing meals and utilising food moulds for Aged Care Residents
• Experience in leadership and training of staff within a kitchen environment
• Previous experience in a similar role; commercial kitchen or other food services
• Catering and Food services supervisory experiences
• Flexibility in adapting to a changing roster
• An understanding of Aged Care and resident rights and responsibilities
• The ability to effectively work in a multi-disciplinary team
• Demonstrated experience in HACCP food safety
