Commis Chef - À La Carte

Nestled beneath the three story high feature windows of the Pullman Cairns International, Coco’s Kitchen + Bar showcases our tropical environment with a wonderful array of local fish and seafood, with an emphasis on high-quality, produce from within the region.

Executive Chef, Simon Capewell and his team are the masterminds behind the mouth-watering dishes found in the restaurant. With over 25 years’ experience in the industry, Simon has followed his passion of experiencing different cultures and this is reflected in the dishes he creates.

As a member of our established Kitchen team, you will be able to express your passion for first-class cuisine. Your flexibility in adapting to special requests will contribute to creating memorable dining experiences that will see guests returning time and time again.

This role is responsible for assisting the kitchen team with daily operations, ensuring a high quality preparation and presentation of food is provided to guests dining in Coco’s Kitchen + Bar. These daily operational duties include: 

• Preparation of mis en place
• Presentation of food produced in line with kitchen recipes and standards
• Maintenance of a clean and hygienic work environment 
• Maintenance of strict stock rotation ensuring minimum wastage
• Ensuring safe food handling practices throughout the kitchen, as required by current food health and hygiene regulations. 

To be successful in this role you are required to have completed a recognized trade qualification, and to have previously worked in a kitchen with the focus on À La Carte service. Additionally you will display the following characteristics: 

• Willing to work within a large kitchen team, with the flexibility to work on a rotating roster, with shifts at a variety of service times. 
• Demonstrate an adaptable approach to service to ensure guests have a great dining experience.
• Strong communication and organisational skills
• Well versed in all aspects of Food Hygiene, HACCP and OH&S to ensure safe working practices are followed within the kitchen.
