Role Overview:
We are seeking a skilled and passionate Deputy Head Distiller to join the Hellyers Road Team. This role requires expertise in distillation processes, a deep understanding of whisky production, and a commitment to maintaining the highest standards of quality and craftsmanship. You will:
- Monitor all aspects of whisky production, from grain to bottle, ensuring methods and quality standards are adhered to and production timelines are met reporting any out-of-specification product to the Head Distiller
- Monitor distillation processes to achieve desired flavour profiles and maintain consistency across batches.
- Work with the Head Distiller to assess whisky through setting up sensory assessments and collating and analysing statistical data using appropriate scientific methods.
- Monitor maturing inventory, ensuring that vatting, marrying and finishing protocols are adhered to.
- Maintain accurate production records and produce reports as directed by the Head Distiller
- Manage external contractors on site ensuring relevant inductions have been conducted by a Hellyers WHS representative and any relevant licenses are obtained.
- Liaise with Leading Hand Distiller to manage production around any distillery repairs and maintenance and project work.
- Monitor inventory levels to ensure timely procurement of raw materials and consumables.
- Stay informed about industry trends, technological advancements, and regulatory changes to inform decision-making and innovation within the distillery.
- Conduct regular quality assessments and sensory evaluations to monitor product quality and identify areas for improvement.
- Adhere to Hellyers Road Distillery health, safety and environmental policies and procedures to create a safe and sustainable work environment.
- Support the distillery team to maintain operational awareness and other HRD quality administration tasks;
- Work in the distillery as required to relieve Distillers for breaks, training purposes and annual leave coverage.
- Represent Hellyers Road Distillery at public and industry events, tastings, trade shows and functions, showcasing our products and engaging with customers to educate them about our brand and the art and science of whisky making.
Responsibilities:
- Product testing and development to ensure the final product meets the expectations of our customers
- Maintain 5S standards
- Production data and record keeping and production of reports as required
- Analyse trends in performance for new make spirit highlighting areas of performance of concern, and providing the Head Distiller with performance data
- Work collaboratively with internal and external subject matter experts to build knowledge and expertise in brewing and distilling
- Conduct on the job observations to ensure adherence to best practice
- Follow Hellyer’s Road Distillery policies and procedures
- Contribution to the continual improvement of processes and products
- Maintaining a safe work environment by adhering to OH&S procedures
Requirements:
- A Safety-First mindset
- General Certificate in Distilling (IBD) or other qualification relevant to distilling
- Willingness to continue studies in relevant areas eg WSETIII or IBD Diploma.
- A great attitude and always looking for continuous improvement
- A focus on always providing excellent customer service
- All PPE will be provided by HRD
- Any specialised equipment will be provided by HRD.
- Current Forklift License
