Zouki Group is looking for a passionate and motivated Executive Sous Chef to run our BOH operations of Canberra Zouki sites under the guidance of the Executive Chef.
The Zouki Group is a national privately owned company running Cafes located within major hospitals across Australia. Zouki prides itself in providing high quality food and service.

Responsibilities
- Control and direct the food preparation process and any other relative activities.
- Achieve all the budgets and targets set by the management.
- Follow rotational menus with new or existing culinary creations ensuring the variety and quality of the servings.
- Approve and “polish” dishes before they reach the customer.
- Plan orders of equipment or ingredients according to identified shortages.
- Maintain high standards in organizing and keeping the work stations always clean.
- Monthly stock takes.
- Arrange for repairs when necessary.
- Remedy any problems or defects.
- Oversee the work of subordinates.
- Maintain HACCP records.
- Comply with nutrition and sanitation regulations and safety standards.
- Foster a climate of cooperation and respect between co-workers.
Requirements and skills
- Proven experience as senior chef
- Exceptional proven ability of kitchen management
- Ability in dividing responsibilities and monitoring progress
- Outstanding communication and leadership skills
- Knowledge of international cuisines and ability to follow recipes.
- Experience in catering, bulk cooking, bain-marie style cooking, wok cooking will be highly considered.
- Up to date with culinary trends and optimized kitchen processes
- Good understanding of useful computer programs (MS Office, restaurant management software, POS)
- Credentials in health and safety training
- Culinary related education or certificate
- Vaccinated against Covid 19
