 Zouki Group is looking for a passionate and motivated Executive Sous Chef to run our BOH operations of Canberra Zouki sites under the guidance of the Executive Chef.

The Zouki Group is a national privately owned company running Cafes located within major hospitals across Australia.  Zouki prides itself in providing high quality food and service.

Responsibilities

• Control and direct the food preparation process and any other relative activities.
• Achieve all the budgets and targets set by the management.
• Follow rotational menus with new or existing culinary creations ensuring the variety and quality of the servings.
• Approve and “polish” dishes before they reach the customer.
• Plan orders of equipment or ingredients according to identified shortages.
• Maintain high standards in organizing and keeping the  work stations always clean.
• Monthly stock takes.
• Arrange for repairs when necessary.
• Remedy any problems or defects.
• Oversee the work of subordinates.
• Maintain HACCP records.
• Comply with nutrition and sanitation regulations and safety standards.
• Foster a climate of cooperation and respect between co-workers.

Requirements and skills

• Proven experience as senior chef
• Exceptional proven ability of kitchen management
• Ability in dividing responsibilities and monitoring progress
• Outstanding communication and leadership skills
• Knowledge of international cuisines and ability to follow recipes.
• Experience in catering, bulk cooking, bain-marie style cooking, wok cooking will be highly considered.
• Up to date with culinary trends and optimized kitchen processes
• Good understanding of useful computer programs (MS Office, restaurant management software, POS)
• Credentials in health and safety training
• Culinary related education or certificate
• Vaccinated against Covid 19
