Executive Sous Chef

We are looking for a Chef that has the culinary know-how to run a large-scale Hotel operations with a strong background in both conferencing and à la carte service. You will be in charge of the day-to-day operation of the entire kitchen operations with direct report to the Executive Chef.

Key responsibilities will include:

• Ensuring product quality and service standards are of a consistently high standard;
• Ensuring all employees are complying with relevant workplace health and safety requirements at all times so strong HACCP knowledge is key;
• Working with the Executive Chef on menu creation;
• Training and development of up to 25 team members – Chefs, Apprentices and other kitchen team;
• Controlling and analysing departmental costs on an ongoing basis;
• Devising initiatives and strategies to ensure financial targets are met

The successful candidate will need to demonstrate:

• Formal qualifications in Commercial Cookery or the equivalent;
• Experience in a similar role working at middle to upper level management within a large 4 or 5 star Hotel/Resort, preferably with multiple outlets;
• Demonstrated thorough practical knowledge of Food Safety and other workplace health and safety practices;
