The Grand Roxy Brighton Le-sands is seeking a chef to fill our venues needs working Full Time minimum 38 hours per week. As a valued member of our staff, you will contribute to creating an exceptional dining experience for our events and functions.
As the Chef, you will be paid 70k plus super working Full Time in our Brighton Le-sands location. You will be responsible for planning and organising the preparation and cooking of food for our large function areas.
This is a hand-on position. To be successful in this role you will:
· Ensuring quality of all kitchen and food supplies from ordering, storing, food safety, preparation of cooked dishes, and design of the presented food for our events and functions
· Observing food budgets and cost associated with current food ordering, stock, wastage and developing food budgets to suit menus.
· Managing food supplies and stock ordering, ensuring stock level accuracy and proficiency for large events
· Uniquely demonstrating on food design and preparation techniques and discussing the way the food should be cooked by our cooks. Chef and cooks work together which also involves designing, preparing and cooking all food
· Techniques on freezing and unfreezing food that include preserved foods including specialty meats.
· Discuss with managers on designing of prepared food for our clients that including special functions and events. Working on development of new food designs and presenting to customers.
· Working with Dieticians on appropriate ingredients and preparation for health food offerings for various groups of clients, vegetarians, sports people, etc
· Preparing specialty catering for nutritionists and Dietitians on a regular basis.
· Ensuring compliance of food safety and hygiene is mandatory
· Working with manager on selecting the right staff to work within the operation. Prepare and distribute duty rosters for kitchen staff.
· Advisory and training other cooks, manager and waiting staff of foods preparation, hygiene, safety, kitchen operation, customer complaints, specialty food requests by customers and dietitian requirements for specialty cooked and prepared dishes. Promote and maintain good working relationships throughout the team.
Skill Requirement:
The successful candidate would also need to possess at least a diploma level with atleast 2 years Full Time industry experience. Alternatively at least 3 years of closely related work experience will substitute for formal qualifications.
