Position Title: Junior Sous Chef

Location: The Lane Vineyard, Hahndorf

Position Type: Full Time 

Rostered Days: TBC – over a 7 day roster

Reports To: Head Chef

Job Overview: 

The Junior Sous Chef will assist the Head Chef and Sous Chef in the daily operations of the kitchen, ensuring the highest standards of food quality, presentation, and service. The ideal candidate will have a passion for fine dining and a commitment to maintaining our reputation for excellence.

Key Responsibilities:

  • Assist in the preparation and cooking of menu items, ensuring consistency and quality in every dish.
  • Supervise and train junior kitchen staff, fostering a positive and productive work environment.
  • Collaborate with the Head Chef and Sous Chef in menu planning and development, incorporating seasonal and locally sourced ingredients.
  • Ensure all kitchen operations comply with health and safety regulations, maintaining a clean and organized workspace.
  • Monitor inventory levels, assist in ordering supplies, and manage stock rotation to minimize waste.
  • Contribute to the creation of daily specials and new menu items, bringing creativity and innovation to the kitchen.
  • Assist in managing kitchen staff schedules and ensuring adequate coverage during service hours.
  • Take charge of kitchen operations in the absence of the Head Chef and Sous Chef, ensuring smooth service and high standards are maintained.

Qualifications:

  • Minimum of 3 years of experience in a professional kitchen, preferably in a fine dining or upscale restaurant environment.
  • Strong culinary skills with a keen eye for detail and presentation.
  • Excellent knowledge of kitchen operations, including food safety and sanitation standards.
  • Ability to work effectively in a fast-paced environment and handle multiple tasks simultaneously.
  • Strong leadership and interpersonal skills, with the ability to motivate and manage a team.
  • Passion for food, creativity, and a commitment to continuous learning and improvement.
  • Relevant culinary qualifications or certifications are highly desirable.
