The National Executive Chef – Defence will work collaboratively across our Defence contract to develop and implement the vision of our future hospitality offerings. The role will provide specialist insight and advice on industry trends, inclusive of all aspects of the food offer, customer experience, and integration of our catering offer into the larger base services transformation project. In addition to this, your passion will drive you to develop culinary talent and capability, continuously seeking out innovation to incorporate on-trend food solutions.
The Position
Develop a broad suite of innovative options in the culinary space to meet the vision of hospitality transformation.
Integrate these options across the broader innovation landscape in the living precinct (accommodation, living spaces, recreation, etc)
Support sustainability and social initiatives
Continue to manage the innovation pipeline for ESS Defence during the life of the contract.
Develop and implement consistent food standards, operating concepts, and programs for the sector.
Update and refresh existing Compass Group culinary concepts to improve quality, cost, safety, resident/patient experience or choice.
Drive innovation in new product and menu development by partnering with our procurement team to source quality and value ingredients to improve our overall offerings.
Support the business development team in the creation of food programs and culinary staffing structures for new bids and retention.
Coach the culinary teams to ensure the delivery of best value quality services, effective forward planning, meeting of objectives, management of priorities and the appropriate delegation of responsibilities.
Act as a subject matter expert in spotting and developing culinary talent.
Model and drive a culture of open communication at all levels to create an environment where employees to site level are engaged in business objectives and activities.
Maintain knowledge of current industry standards, “best practice”, trends and fashions in F&B including an understanding of initiatives adopted by our competitors.
The Person
As well as being passionate about food, you will also possess the following attributes;
Certificate III Commercial Cookery or equivalent
Proven examples of menu design incorporating special diet preparation and broad dietary requirements
Experience in operational management, people leadership & motivation, budgeting, service delivery
Ability to lead geographically diverse catering teams.
Ability to prioritise work schedules and model the ability to balance competing demands.
Flexible approach and attitude
Microsoft Office proficient
Passionate about delivering world class customer service
Excellent work ethic with great communication skills
Ability to work under pressure while maintaining a professional manner
