Cuts, trims, tenderises, and grinds meat using various equipment in the Meat Department. Reassembles and maintains equipment for daily use. Cleans and sanitises work area and equipment throughout the workday. Assists with wrapping meat and seafood, stocking the meat case, and arranging the display case. Assesses the production needs and rotates merchandise. Follows proper safety procedures and standards. Maintains the sales area.
Job Duties/Essential Functions
Dismantles equipment, washes, rinses and sanitises removable parts of equipment and meat room
Inspects and reassembles equipment, addresses any corrective actions from the previous night
Reworks display case, filling and rotating merchandise
Packs/wraps meat and seafood using automatic and manual wrapping machines
Labels merchandise and puts labelled/wrapped merchandise in display case
Completes department paperwork as required
Performs weekly yield tests
Adhere to all department Standard Operating Procedures
Follows Costco Meat Department general and specific meat standards, procedures and goals
Cleans and sanitises work area throughout the day
Follows sanitation standard operating procedures (SSOP) guidelines for cleaning and sanitation of all equipment
Completes and complies with 11 commandments of Quality assurances, Food Safety Certification, department specific training and all safety training required by warehouse and meat department
Complies with health code by following sanitation standards and maintaining proper temperatures
Stocks and rotates meat inside meat cooler/freezer
Removes rubbish from department and work areas. Operates rubbish compactor and cardboard baler
Transfers cases of meat from cooler to preparation area
Cuts, trims, tenderises, grinds meat and checks fat content per Costco specification
Follows proper department production procedures and standards for quality and consistency of finished merchandise
Assists with other departments of the warehouse
Provides and ensures prompt and courteous customer service to members, employees and vendors
Ability to operate vehicles, equipment or machinery
Computer, copier, phone, band saw, tenderiser, grinder and wrapper
Qualifications (Costco-specific or industry specific skills that candidates should possess)
Education/Training:
High School Certificate or Trade Qualification (Butcher)
Licenses/Certifications:
Trade Qualification (Butcher)
Experience/Skills:
Butchery or comparable experience
