You will be responsible for end-to-end kitchen operations and directing the food preparation process to ensure the highest standard and quality of food production for our guests. The Chef will also be responsible for continuously developing our kitchen brigade.The Chef is hands-on in preparing and cooking all dishes for our Chef Tasting menu 6 or 8 Course, Altitude Dining menu and events. The Chef is also responsible for inventory management, including liaising with suppliers and vendors. The Chef must ensure that the kitchen meets all compliance and regulations, including hygiene and food safety guidelines.This is a hands-on position, requiring attention to detail and a positive work attitude. You may be required to work any of the seven days of the calendar week, including weekends and gazetted public holidays. A standard working day can consist of up to 12 working hours, within the hours of 07:00hrs and 00:00hrs. The Chef’s main work location is in the Eureka Tower, with the potential for travel within Australia to alternative Journey Beyond businesses.RequirementsAbout You
- Minimum 3 years’ experience in a similar premium restaurant
- Commercial Cookery Certificate (essential)
- Food Handling Safety Certificate (essential)
- Provide First Aid (preferred)
- Demonstrated experience producing high-quality food unsupervised, with knowledge of all sections
- Strong communication skills with the ability to control and direct food preparation process
- Exceptional attention to detail to ensure all dishes are up to standard
- Leadership skills with the ability to coach and mentor a small team
- Proficiency with financials to ensure stock control is within budget
- Adaptability to change and willingness to embrace new ideas and processes
