As a Chef de Partie in our Culinary Brigade, you will be at the forefront of our food offering, providing our guests with exceptional, creative, locally sourced and seasonal gastronomic delights. You will help shape the successful opening of Brisbane's first Hotel Indigo in creating an exciting, innovative, and memorable hotel experiences for all guests whilst working with a well-rounded and highly motivated Culinary Team under the direction and leadership of an exceptional Head Chef.

Position Requirements:

  • Work alongside and take direction from the Head chef as well as manage and provide guidance and training to the junior chefs. 
  • Assist in all aspects of food preparation and follow our ethos of minimal to zero food wastage.
  • Oversee a section of the kitchen, be it pastry, butchery, fish, sauces, vegetables and so on.
  • Be ready to contribute with creative ideas.
  • Ability to keep up high quality standards in a busy service.
  • Ensure a positive relationship is maintained between back of house and front of house.
  • Understand the importance of HACCP and maintaining the highest hygiene standards.
  • Display a high degree of flexibility in acceding to “off the menu” guest requests. Offering comparable alternatives where guest’s original request cannot be delivered to their expectation.
  • Keeping abreast with changes and developments introduced by the kitchen leadership team in the selection, production and presentation of the menu.

You will possess:

  • The ability to curate memorable experiences for our guests through the quality of your food.
  • Experience with Japanese food styles/service highly regarded.
  • Minimum 1-2 years’ experience as a CDP in a busy top end restaurant or hotel 
  • A Cert III or IV Commercial Cookery (or similar) is mandatory.
  • Professional verbal communication skills and strong eye for detail
  • Impeccable hygiene, grooming and presentation. 
  • Strong work ethic and flexibility to work over 7 days a week rotating roster. 
  • Superior organizational, time management and follow through skills.
