Duties and responsibilities are as follows:
• Oversee catering events and may also offer culinary instruction and /or demonstrate culinary techniques.
• Train and manage kitchen personnel and supervise/coordinate all related culinary activities.
• Hold monthly or quarterly meeting with the other chefs to ensure smooth running duties.
• Establish portion sizes (portion factor), test new recipes and file for all new menu items in the recipe books.
• Ensuring that all food is of excellent quality and served in a timely manner.
• Ensure proper equipment operation/maintenance.
• Coordinating kitchen staff and assisting them as required.
• Ensure that each department/section place an order for the next day consumption based on their par stocks
levels.
• Manage the kitchen and ensures compliance with all standards of best practices.
• Ensure that safety standards and sanitary requirements are met each day.
• Monitoring temperature of all equipment and facilities like cool room and freezers.
• Enforcing safety and sanitation standards in the kitchen.
• Report any damage or maintenance at workplace.
• Taking stock of ingredients and equipment and placing orders to replenish stock.
• Ensure proper receiving, storage, and rotation of products to comply with the standards.
• Creating new recipes to keep the menu fresh.
• Fully aware of trends in the industry and make suggestions for improvement of the catering operation.
• Receiving feedback and making improvements where necessary.
• We may be required to perform you other duties, where reasonable for your position, training, and experience.
