Job description

Position purpose
To allow Unox Australia to increase engagement with Clients,
Dealers, Key Accounts and End users and Manage our Kitchen Facilities and Trade Events. Your duties and tasks will be that of a Corporate Chef on a full-time basis and will include weekly demonstrations in the delivery of food to clients after careful consideration and preparation of menus and dishes.
The core objectives of the role include:
FOOD PREPARATION & DEMONSTRATIONS: 75% of total time
•Planning menus, including for the following types of machines:
•Cheftop
•Cheftop X Models
•Cheflux
•Bakertop (bakery and pastry items)
•Bakerlux (all types of baked foods)
•Speed X Microwave Combi Oven
•Speed.Pro Microwave Convection Oven
•Linemiss Top
•Linemiss
•Linemicro
•Menu preparation for the following types of food:
•Pastry and bakery, including cakes;
•Main meals such as required to suit the style of food being requested by the Prospective Client or Restaurateur.
•Entrees such as required to suit the style of food requested by the prospective Client or Restauranteur.
•Desserts such as required to be proven for the Patisserie of Function Centre or Restaurant.
•Prepare menus according to client requirements. For example, the business works with numerous clients including Murray Valley Pork, Oporto Chicken, 7/11, Coles Australia, Major Catering Companies and the role requires planning of tailored menus (on a regular and ever-changing basis) accordingly.

•Developing and adjusting menus according to the needs of the client to enable the Oven to give the Best results possible.

•Monitoring quality of dishes prepared at all stages of preparation and presentation to ensure that the highest standards are maintained at all times.

•Arrange all Food requirements and operate in Unox Standardworks way for each and every Demonstration and Event held by Unox Australia.
•Ordering food and associated supplies and ingredients to be able to prepare dishes.

•Managing a budget and controlling costs in the kitchen with respect to the kitchen needs, including, but not limited to the following:
•Estimating food costs and ordering food accordingly;
•Estimating UNOX business labour costs to prepare food and the menus that are developed for specific client needs
•Proving to Clients either Resellers of our products or end users, how to enable the Oven to Calculate Cooking and Operating costs, which enables the Chef to calculate Real cooking costs including Raw Material costs as well.

•Preserving and maintaining food (freezing, storing and monitoring food freshness and suitability for use in preparing dishes).
•Maintaining all Hygiene standards and Temperature Checks as per HACCAP regulations.

•Build relationships with Food Producers and Company supporters to increase Brand awareness and include high quality products and People into our Marketing initiatives.

•Attend all Unox Australia Trade Shows and present information to all interested parties by means of Demonstrations and Individual Cooking Experiences. It is envisaged that this will occur weekly and you will be expected to have planned menus for each clients’ needs and circumstances.

MANAGEMENT: 25% of total time:
•Manage day to day operation of the kitchen

•Manage all demonstrations to Dealers Reps, End Users and interested parties at Unox HQ Melbourne and other sites.

•Manage, explain and enforce food hygiene regulations

•Training, demonstrating techniques and advising on cooking procedures to the other Chefs who are also employed by the business as ‘Active Marketing Chefs’ (AMC). The business currently employs 13 AMCs who work in a dual function of cooks and active marketing and sales representatives and will report to this Chef role and the Managing Director.

•Training, demonstrating techniques and advising on cooking procedures to clients at the UNOX training and development academy. This includes menu development and design for current and prospective clients. Discussing food preparation issues with Management, kitchen staff / cooks and AMCs and with clients and customers.

•Train staff as and when required and in consultation with the Managing Director and Sales Director.

Other Duties•Manage the ****@unoxaustralia.com.au address in order to
assist our customers to use our equipment or cooking methods by means of cooking method development and testing.
•Phone support of customers wishing to improve or start their cooking procedures before training has taken place or otherwise.
•Travel to Dealer Network Showrooms to hold Dealer training events, usually including an Individual Cooking Experience.
•Manage all food requirements for both Kitchen and all Trade Shows and preparation of such.
•Occasionally travel to End User to conduct Top Training for New Customer when AMC is not available.
•Occasional Travel Overseas to assist in Trade Event or Show to assist in Marketing initiatives instigated by other Unox operations in other countries.
•Be available to Demonstrate in conjunction with Key Account Manager in both Unox Corporate Kitchen and at Key Account Kitchens when required Interstate if required.
•All tasks required to run an effective and functional Corporate Kitchen to enable Unox Australia to Market its products in the most effective way.
•Be occasionally available to conduct Unox Australia Dinners and Events when required out of Normal Business Hours.
•Assist Unox Active Marketing Chef (AMC) when necessary to improve Cooking methods and recipes for Client needs when required.

PERSON SPECIFICATION
Qualifications•Qualified Chef and Patisserie
Experience•Ideally we seek 4-5 years of related experience using Unox Products in a Commercial environment. Experience or Qualifications at a High level in Pastry work, Baking and Pizza Making. Experience with Key Accounts and Food production and procedures in these markets, knowledge of operational issues within large chains, Hotel Groups and QSR business is essential. Knowledge of Hot Holding and Food Preservation techniques using “Service Temperature Preservation” products essential.
