Our guests and our associates are at the heart of everything we do. In Australia, Pan Pacific Hotels Group owns and operates six hotels including Pan Pacific Melbourne, which is conveniently located in the heart of South Wharf providing easy access to the Melbourne Convention and Exhibition Centre, Central Business District and key local attractions.

As the Executive Sous Chef, you will play a pivotal role in maintaining the highest standards of culinary excellence at the Pan Pacific Melbourne Hotel. Reporting to the Director of Food & Beverage and Culinary Operations, you will be responsible for overseeing the day-to-day operations of the kitchen, ensuring the delivery of exquisite and innovative cuisine to our guests. This leadership role requires a creative and strategic thinker with strong organisational and management skills.


The successful Executive Sous Chef will:

  • Collaborate with the Director of Food & Beverage and Culinary Operations to plan and execute diverse and high-quality menus across all outlets.
  • Lead and inspire the culinary team to consistently achieve exceptional results and uphold Pan Pacific Melbourne's culinary standards.
  • Manage kitchen operations, including food preparation, cooking, and presentation, to meet and exceed guest expectations.
  • Monitor and control food costs, ensuring efficient use of resources without compromising quality.
  • Implement and maintain strict hygiene and safety standards in compliance with local regulations.
  • Foster a positive and collaborative working environment, promoting teamwork and professional development among kitchen staff.
  • Stay current with industry trends and culinary innovations, incorporating them into menu development


Ideally you will have:

  • Proven experience as a Sous Chef or Executive Sous Chef in a 5 star hotel
  • Relevant qualifications/certificates in Cookery (Certificate III or equivalent), HACCP and local Food Safety Handling & Hygiene
  • Strong leadership and interpersonal skills with the ability to motivate and mentor a diverse team.
  • Exceptional organisational and time-management abilities.
  • Creativity and passion for delivering unique and memorable culinary experiences.
  • Knowledge of current food trends and a commitment to staying updated on industry best practices.
  • Excellent communication skills and the ability to collaborate effectively with other departments.
  • The flexibility to work on a rotating roster including weekends and public holidays
