Job Description:
We are seeking a highly skilled and experienced Executive Sous Chef with expertise in Italian cuisine to join our culinary team. As an Executive Sous Chef at Olivignia, you will play a crucial role in the kitchen's day-to-day operations, working closely with our Executive Chef to create and execute exceptional Italian-inspired menus. This is an opportunity for a talented chef with a passion for cooking to make a significant impact in a dynamic and prestigious culinary environment.
Responsibilities:
- Collaborate with the Executive Chef to plan and develop innovative and seasonal Italian menus, with a focus on dishes such as pizzas, pastas and varied proteins.
- Oversee and participate in the preparation and presentation of high-quality Italian dishes, ensuring authenticity and perfection in flavour and execution.
- Lead and mentor the kitchen staff, to ensure a consistent and authentic dining experience.
- Maintain and implement kitchen procedures to meet food safety and quality standards.
- Manage inventory and control costs, including ordering supplies and managing food waste.
- Monitor kitchen equipment and coordinate maintenance and repairs as needed to support cooking methods.
- Assist in recruiting, training, and scheduling kitchen staff.
- Ensure a clean and organized kitchen workspace in alignment with high kitchen standards.
Qualifications:
- Proven experience as a Sous Chef or similar role.
- Culinary degree or relevant certification.
- Strong culinary skills and a passion for creating menus.
- Proficiency in menu planning, food costing, and kitchen management, specifically within Italian cuisine preferred
- Excellent leadership and communication skills.
- Ability to work in a fast-paced, high-pressure environment.
- Knowledge of food safety regulations and best practices within the context of Italian cuisine.
- Creative and innovative approach to product creation.
