Full Time Head Baker
SALARY $70,500 per annum plus superannuation
Working hours
Full time 4am—12am five days a week (weekend and public holiday included)
Duties and Responsibilities
•Preparing, baking, and producing pastries, breads, rolls, and desserts.
•Bake advanced artisan and decorative breads.
•Adjusting the timing and speed settings for mixing or blending equipment so that the components are mixed or cooked according to the recipe.
•Recommending recipes to refresh our specialty menu.
•Ensuring an appropriate supply of all prepared products as well as proper storage and refrigeration.
•Maintain inventories, material order and quality control.
•Cleaning, dismantling, and storing all baking equipment,
•Utilising adequate quantities and rotating products to keep spoilage/waste to a minimum.
•Facilitate effective communication and engagement at the workplace.
•Solve problems and make decisions at supervisory level.
•Supervise food production.
•Supervise and train staff.
REQUIRED SKILLS
Asian or Japanese style bakery experience
Asian or Japanese style bakery or pastries qualification
Languages - English, Chinese
Flexible working hours essential - 4am—12am five days a week, need include weekend and public holiday.
The dough shaping need skill and experience, and also need sense of temperature, humidity and time control. It is different with western style bakery with fixed setting. As the result, Asian or Japanese style bakery experience is very important.
