About Fuego Catering by the Sea Established in 2020 in West Beach, SA, Fuego by the Sea celebrates the best of Argentinian, Spanish & Italian cuisine with welcoming hospitality and service. Boasting an abundance of premium local produce and drinks alongside signature charcoal meat and seafood dishes. Also well knows as a company catering, specialised in meats from South America cooked on charcoal. About the Role We are seeking a full-time qualified Chef who will be responsible for:
? Designing and updating menus, incorporating a variety of Argentinian, Spanish, and Italian dishes, emphasising the use of premium local produce and specialty items prepared on a charcoal grill.
? Leading and coordinating the kitchen team in the execution of daily culinary tasks, ensuring high-quality standards in both flavor and presentation of all dishes.
? Managing the entire cooking process on a specially designed 2-meter charcoal grill, including temperature control to achieve optimal doneness, flavor, and texture.
? Planning and conducting food preparation activities from starters to desserts, applying expert knowledge in smoking techniques, meat marination, and grill cleaning to enhance dish quality. ? Supervising and training kitchen staff in advanced culinary skills, such as knife techniques, recipe development, and effective use of kitchen equipment.
? Conducting regular inventory checks and overseeing the ordering of raw materials and kitchen supplies, selecting suppliers who meet the restaurant's quality standards and budget requirements.
? Calculating food costs and setting prices for dishes in coordination with the restaurant management to ensure profitability while maintaining competitive pricing.
? Ensuring compliance with all health and safety regulations in the kitchen, implementing robust food safety practices and maintaining high standards of hygiene and sanitation.
? Collaborating closely with the restaurant management team to plan and organize shifts, hire new staff, and oversee budget management to align operational activities with business objectives.
? Developing and refining baking and pastry skills within the kitchen team, expanding the dessert offerings to complement the Mediterranean-inspired menu. About you: The minimum requirements for the position are:
? 3 years or more of relevant work experience as a Chef
? Experience at least 1 year cooking with charcoal
? Knowledge about Argentinean, Mediterranean and Italian food.
? Relevant Certificate IV or higher qualification in Commercial Cookery, Kitchen Management and/or Hospitality Management
? Ability to work in a fast-paced environment
