Our client is a renowned dining establishment located in the beautiful coastal town of Mandurah, Western Australia. Their cuisine is Modern Australian Fusion style. They are currently seeking an experienced and passionate Head Chef to lead their talented kitchen team.
Location: Mandurah, Western Australia
Salary: Start from AUD 73.150 per year

List of job descriptions:
- Work on shift in the service kitchen on various sections (Pass/Larder, Pans, Grill/Fryers), but with a focus on Pass and plating meals
- Place weekly orders
- Prep food in prep kitchen at scheduled times each week
- Train kitchen team in cooking and plating food
- Work with General Manager on securing better quality and more cost effective produce with suppliers
- Complete kitchen cleaning jobs with kitchen staff (daily, weekly and deep clean jobs)
List of responsibilities:
- Lead and coordinate a small kitchen team (5-6 chefs/cooks, 3 kitchen hands)
- Oversee daily kitchen operations, including food preparation, inventory management, and staff scheduling.
- Create, develop, and update the restaurant’s menu with seasonal and innovative dishes.
- Lead, train, and mentor kitchen staff, including sous chefs, line cooks, and kitchen assistants.
- Maintain consistency in food preparation and presentation across all shifts.
- Monitor and manage food costs, labour costs, and kitchen expenses.
- Oversee the ordering, storage, and inventory of ingredients and supplies.
- Assist General Manager with staff rostering and coordination staff leave.

- Other general kitchen equipment as per normal (stoves, deep fryers, grills, fridges etc)
Qualifications:
- Completion of a Certificate IV in Commercial Cookery or an equivalent
- Minimum 3 years’ experience performing the role as a Head Chef and managing a kitchen team.
- Sound knowledge of HACCP food safety and hygiene procedures
- Proven leadership and team management experience, with the ability to train, mentor, and inspire kitchen staff.
- Strong background in menu planning, development, and execution, with a focus on innovative and seasonal dishes.

- Possession of a valid English language certificate is mandatory, with a minimum overall score of 5.5 and no individual component scoring below 5.0 on the IELTS test.
- Successful completion of a Skill Assessment from the appropriate Australian skill assessing authorities (TRA or VETASSESS) may be required, contingent on your passport or the location of your placement.
