About the role:
The RNA is currently seeking a Junior Sous Chef Pastry to join the Operations – Kitchen Team. The Junior Sous Chef Pastry will closely liaise with Executive Sous Chef, Head Pastry Chef, Chef de Parties and Commis Chef to ensure successful delivery of catering for Events on premises as well as external catering. The Junior Sous Chef Pastry will need to be customer and solution focused, playing a hands-on role with all food preparation and execution of food service.

The Royal National Agricultural and Industrial Association of Queensland (RNA) is home to the Royal Queensland Show (Ekka), and an array of cultural events. The precinct has evolved into a state-of-the-art mixed-use events establishment; the centrepiece being the Five Star Royal International Convention Centre (Royal ICC). As we move into a period of growth, we are currently seeking an Junior Sous Chef Pastry to join the operations – Kitchen Team.
This is a Full-time Permanent position
Key Accountabilities:
- Ensure the day-to-day smooth operation of the department with employees who are trained to perform to specified standards.
- Ensure compendium/menu recipes are followed and updated
- Supervise the mise en place, ensuring that all sections are ready for service and event delivery
- Ensure that food is hygienically handled and prepared, complying with RNA HACCP standards.
- Closely monitor the requirements in each section, ensuring food is ordered correctly and meets set quality.
- Place store room requisitions and administer kitchen transfers in accordance with requirements.
- Report guest complaints and solutions to relevant department
- Display a confident and creative cooking style with a strong emphasis on consistency and presentation;
- Have a comprehensive understanding of kitchen metrics such as food cost control;
- Ability to liaise with internal and external customers in a professional and courteous manner;
- Display excellent time management skills and ability to work under pressure;

To be successful you will require:
- 3 years post qualification experience
- Holds a qualification in Kitchen Production and Management or Chefs qualification
- Track record of working in a fast-paced environment while maintaining excellent team work
- Experience in managing food and labour costs
- Food Safety / HACCP knowledge essential
