Mair and Doveton Pty Ltd is looking for a qualified and experienced Full-time Pastry Cook to join our team.
Salary Range – $60,000 - $80,000 per annum + super
Business Location – Ballarat VIC
Responsibilities including and not limited to:
- Checking the cleanliness of equipment and operation of premises before production runs to ensure compliance with occupational health and safety regulations.
- Prepares pastry and dessert items in accordance with standards established by the Head Chef.
- Meet with the Chef to review assignments, anticipated business levels, changes and other information pertinent to the job performance.
- Checking the quality of raw materials and weighing ingredients
- Kneading, maturing, cutting, moulding, mixing and shaping dough and pastry goods.
- Measurement and mixing of ingredients and preparing pastry fillings.
- Monitoring oven temperatures and product appearance to determine baking times.
- Coordinating the forming, loading, baking, unloading, de-panning and cooling of batches of bread, rolls and pastry products.
- Glazing buns and pastries, and decorating cakes with cream and icing
- Maintain complete knowledge of correct maintenance and use of equipment and operating machines which roll and mould dough and cut biscuits.
- Emptying, cleaning and greasing baking trays, tins and other cooking equipment.
- Assist with the development of new designs and recipes.
Skills and Qualifications
- AQF associate degree in baking and pastry arts or similar preferred.
- Prior Experience as a Pastry Cook.
- Advanced knowledge of traditional pastry baking techniques.
- Creative ability in designing, decorating, and filling confectionery.
- Ability to coordinate with other chefs and manage pastry section staff.
- In-depth knowledge of food industry regulations.
- Ability to work Full Time
- Flexible to work on a rotating roster.
