At the centre of the hotel’s unique offering are artisanal culinary encounters at La Madonna Restaurant & Bar, a unique collaborative project between Next Hotel Group and Melbourne Constant Paul Turner, the most highly regarded professional in the Melbourne culinary scene. The Restaurant showcases modern Italian dining with sneaky Asian influences in a ‘not quite fine dining’ setting. 

We are all about curating memorable experiences for our guests including through our gastronomic offerings. For this we need a passionate and experienced Chef De Partie to join our creative culinary team, where you will have the opportunity to contribute and learn. 

Position Requirements:

• Work alongside and take direction from the senior chefs as well as manage and provide guidance and training to the junior chefs
• Assist in all aspects of food preparation and follow our ethos of minimal to zero food wastage
• Oversee a section of the kitchen and be ready to contribute with creative ideas
• Keep up high quality standards in a busy service
• Ensure a positive relationship is maintained between back of house and front of house
• Understand the importance of HACCP and maintaining the highest hygiene standards
• Display a high degree of flexibility in acceding to “off the menu” guest requests. Offering comparable alternatives where guest’s original request cannot be delivered to their expectation.
• Keep abreast with changes and developments introduced by the kitchen leadership team in the selection, production and presentation of the menu.

You will possess:

• The ability to curate memorable experiences for our guests through the quality of your food
• Minimum 1-2-years’ experience in a similar role in a busy kitchen
• The passion and drive to succeed and produce high quality dishes to our company standards
• Professional verbal communication skills and strong eye for detail
• Impeccable hygiene, grooming and presentation
• Strong work ethic and flexibility to work over 7 days a week rotating roster, including weekends and public holidays
