Craigie Knowe Vineyard is located on the East Coast of Tasmania. We produce award winning wines, and we are innovative with our Cellar door. We have a full commercial kitchen only 2 years old. We have now added a permanent 12x15m Marquee.
We are looking for an experienced and qualified Head Chef to create a lunch menu for 5 days per week Thursday through to Monday. We do offer degustation dinners each month along with Weddings and events. Generally, your working week will only be day shifts.
Responsibilities
- Ensuring the production and presentation of high-quality meals
- Be capable in all aspects of the kitchen operation.
- Prepare and execute dishes and menus with colleagues.
- Be passionate about fresh seasonal produce.
- Ensure there is an adequate amount of supplies and prep for service
- Be able to work in a fast-paced kitchen independently and consistently, clean and tidy
- Prepare all dishes for quality, presentation and portion control.
- Demonstrate strong work ethics and a 'can do' attitude to work with the team and maintain good and respectful relationships.
- Have pride in your presentation and an eye for detail to replicate plating techniques.
- Provide support to a small team of fellow chefs and front-of-house professionals.
- Demonstrating cooking techniques to junior chefs and cooks as applicable
- Enforce strict health and hygiene standards.
- Help to maintain a climate of smooth and friendly cooperation.
Requirements and skills
- Proven experience as Chef
- Exceptional proven ability of kitchen management
- Ability in dividing responsibilities and monitoring progress
- Outstanding communication and leadership skills
- Up-to-date with culinary trends and optimized kitchen processes
- Good understanding of useful computer programs (MS Office, POS)
- Credentials in health and safety training
- Relevant qualification in hospitality
Salary
An annualised wage arrangement of $70K+ is offered plus Super at the SG rate applicable
