Job description

As a F&B Operations Manager, you will be working closely with the Director of F&B Operations Manager and other key stakeholders to deliver the daily operations of our main gaming floor bars, events and Oasis Private Gaming room.

You will be responsible for engaging, coaching and developing a world class team to create truly memorable experiences for our VIP Members and guests by sharing your passion and knowledge with your team, encouraging them to shine and be their best selves to deliver exceptional guest experiences. Further, we are looking for a leader who can drive fiscal performance including revenue and profitability whilst ensuring that we maintain employee engagement and our compliance obligations. You will be hands-on in your operational approach and be passionate about developing your career. This is a key, career defining management role that sits within our Senior F&B Management team.

Oasis Room provides a premium experience for our VIP members showcasing an exquisite dining room and lounge area offering authentic Asian and Western cuisine with attentive and friendly service.  

Sports Bar is a high energy bar that showcases all the very best of sport live! Whether it be rugby league, UFC or the Grand Prix, Sports bar is the place to see it! Featuring a wide selection of tap beers, spirits and a classic menu of pub favourites, Sports bar is the heart of Sports in The Star Sydney.

Jade Rabbit is our newest bar located at on the main gaming floor, presenting a list of signature cocktails, high end spirits and refreshing ales.

Rock Lily is our live entertainment venue featuring a diverse range of musical talent live in venue. Perfect venue for that special event or birthday and

Primarily, you will be responsible for the following:

  • Full responsibility for our Main gaming floor bar venues which operate on a 24 hours, 7 days a week basis..
  • Reviewing and analysing the daily operational needs maintaining beverage, labour, product, and expenses on budget
  • Leading and motivating the team to continuously deliver guest experience in line with our service culture.
  • Personally monitor team member performance on the floor with a ‘hands on’ approach ensuring that the is the appropriate level of coverage from venue leadership and team members.
  • Provide recommendations for guest, team, operational or compliance improvements to Director of F&B operations.
  • Awareness and implementation of compliance and duty of care operational requirements such as Responsible service of Alcohol and responsible gaming.

What are we looking for?

  • You will be hands-on in your operational approach and be passionate about developing your career within hospitality.
  • Understanding of guest experience and how to deliver in a premium, 24/7 VIP setting – recognition of regular guests and their personal needs.
  • Outstanding standards, professionalism, and a commitment to guest service
  • Extensive venue management experience in large high volume venues and bars including organisation of events such as superbowl, music events and activations. Casino and licensee experience highly regarded.
  • A passion for service – someone who loves to build rapport with your regular guests!
  • Confidence to lead a large and diverse team that provides service day and night
  • A proactive approach to problem-solving and attention to detail skills are highly regarded.
  • A transparent, thoughtful and consistent approach to team communications
  • Ability to build an engaged team that understands their purpose and role at all levels.
