Food & Beverage Operations Manager

Mercure Perth is conveniently located in the heart of Perth city, with the major shopping, entertainment and nightlife areas all close by. The hotel features 239 well appointed rooms, along with a great restaurant, a cafe, bar, heated rooftop swimming pool, spa, sauna and gym. Business guests are well catered for at Mercure Perth with 6 modern meeting rooms available, accommodating up to 350 delegates.

Working across our multi-outlet venue, you will be responsible for the day to day front of house operations of our restaurant, bar and events spaces. This is a hands-on role focused on delivering memorable guest experiences. 

In this role you will:

• Manage the restaurant, bar, room service and conferencing floors
• Develop, implement and maintain quality standards
• Work closely with the Head Chef to innovate menus and products for sale within the F&B areas of service
• Leading, mentoring and training the Food & Beverage Operations team
• Review and analyse daily operational needs maintaining beverage, labour, product and expenses on budget
• Staff roster management, stock control and purchasing

•  Approved Manager's or RSA
• Strong understanding of food safety requirements (Food Safety Supervisor)
• Previous experience in a multi-venue, hotel environment
• Previous study in Hospitality highly regarded
• Ability to act independently, but also work in a team environment
• Confident in creating rosters and adhering to wage control
• Self-motivated with a passion for hospitality and the guest experience

Please note, the successful applicant will be required to work across a 7 day roster including weekends, evenings, and public holidays. Additionally, this role requires someone who can lead by example, and who is hands on, on the floor with the team.
