In 2014, two fine dining chefs and a maître d opened the doors to Belles Hot Chicken in a cozy Fitzroy, Melbourne diner. Part hot chicken joint, part natural wine bar, part block party, Belles was an industry game-changer and has grown to be the gold standard in not just hot chicken, but our approach to hospitality and good times.
In 2021 under new leadership, we reset Belles vision and strategy to return to our original neighbourhood restaurant roots. Offering up our signature Nashville-inspired comfort food, extensive and fun drinks offer, old-school hospitality and an energetic vibe second to none, Belles is firmly back on the map.
In 2023, we opened the doors to our first two new restaurants since 2018. Our flagship Sydney CBD restaurant just up from Circular Quay and our newest restaurant in Stunning Bondi Beach. This 80 seater 1960s American beachside diner takes us back with wall-to-ceiling timber and custom glass lampshades – reminiscent of the Pizza Hut days.
And we’re looking for someone pretty special…
We’re recruiting for a General Manager to join the Belles family and lead our very busy and steadily growing Bondi restaurant.
You’ll be working directly with the Managing Director and supported by and working closely with a passionate Sydney partner and COO. In your team is a killer, hard-working team of around 15 including front and back of house.
In this autonomous true leadership role, you’ll support and drive our Bondi restaurant to continue kicking record goals, with key accountabilities including;
- Actively support and mentor your team to maintain an up-beat, positive and energic vibe for our guests and team – with full accountability for the restaurant operations aligning to Belles high standard
- As our General Manager, own the operations and stock management of our busy kitchen to ensure we constantly meet all COGS, team, safety and quality targets
- Maintain eagle-eyes over the venue experience to ensure we continue to ace being an experience-led brand above all else, and constantly look for ways to surprise and delight our guests
- Own and actively drive the financial performance of the restaurant. We have a great finance team who actively analyse and report on key metrics, but you’ll work your magic in strategising and implementing operational changes to maintain strong revenue and variable cost control
- Full HR lifecycle management – from recruitment to performance management and ensuring our team are all up to Belles standards every day, and build an awesome team culture
- As part of the Belles Leadership Team, work on projects across your venues and the broader Belles Group to keep improving our guest and team experience, culture, product offer, brand and general good times
On offer is a strong base salary (circa $90k plus super) paid weekly, reimbursement for monthly personal rejuvenation (massage, float tank, MMA, gym membership… you do you), all the chicken you can eat, consecutive days off each week, and a performance-based incentive programme.

We are looking for someone pretty special, Someone with a genuine passion for hospitality and a quiet confidence. You know you’re good, but you’re humble about it and drive results through a well-supported team culture and strong operational structure. More than anything, you are a huge Belles fan and want to be part of the journey as we write Belles next chapter.
Bondi is home, you have been breathing the beachside air long enough to know this is the place to be.
In terms of experience, you’ll need to have led a busy venue team previously as a General Manager or similar role and know the art of supporting a 7-day operation without feeling stretched or letting anyone down. You've made mistakes like all of us, but have learnt from them and continue to hone your leadership skills from a place of empathy, care and pride. And you want to keep growing yourself!
You naturally lead from the front and live and breathe our restaurants. We don’t have a ‘head office’ and expect all our leaders to enjoy being on the roster for key busy services each week to grow respect from the team and know your venues intimately! From there, Sydney is our drumstick.
