HEAD CHEF
Fig & Olive Bar Bistro is seeking an experienced Head Chef who can run a team of chefs & apprentices whilst working hands on to deliver a premium Mediterranean inspired restaurant menu at FIG & OLIVE located in the hub of Brisbane city.
It's a big job for a big personality who is keen to join an a well established business, boasting a popular Italian / Mediterranean influenced food style. Open Monday to Friday, this role offers the right candidate the perfect work/life balance with weekends off where there are no events booked.
Located within Brisbane CBD, the ideal candidate is someone who can handle the hustle and bustle of a busy kitchen & possesses the creative scope to test and trial new menu items as often as they choose. Ideally as the Head Chef, you will be able demonstrate the following skills;
- Is an experienced Head Chef or Executive Chef with more than 3 years experience heading up a Kitchen
- Holds a CERTIFICATE 4 in Hospitality - Commercial Cookery.
- Has the ability to plan menus, source ingredients and deliver within a dedicated food budget
- Controls the food quality, portion size and presentation of each dish
- Ability to communicate with FOH, Owners and Suppliers
- Can confidently prepare and cook a wide variety of meal styles
- Upholds the hygiene regulations
- Ability to supervise and train staff
- Ability to prepare, freeze, thaw, cook and preserve all foods types
- Has effectively planned, co-ordinated and delivered on all aspects of the menu in a dining or catering establishment.
- A ready to work attitude
- A good solid work ethic
- A strong knowledge and demonstrated experience in designing & cooking Italian & Mediterranean foods
- Ability to work in across all sections of the kitchen, ie cold larder, fryer, grill, pans & desserts
- Demonstrated experience in managing the pass during peak periods
- Pride in their personal presentation & their food presentation
- A passion for learning and growing your skill set

- All applicants must be approved to work 40+hrs per week in Australia.
