We have an exciting new project coming to the heart of Sydney's CBD: six high-end venues in one location, aimed at becoming Australia's largest Japanese food emporium. We are searching for the best talent to join us on this thrilling journey.

Duties and Responsibilities:

  • Develop and maintain a comprehensive wine program that complements our menu and elevates the dining experience.
  • Create and update wine lists, ensuring they are well-organized, informative, and reflect current wine trends and customer preferences.
  • Train and lead a team of sommeliers, providing guidance on wine selection, service techniques, and enhancing guest interactions.
  • Collaborate closely with the culinary team to develop wine pairing recommendations for menu items, considering flavour profiles and guest preferences.
  • Conduct regular wine tastings and staff trainings to enhance product knowledge and service skills.
  • Manage the wine cellar, including inventory management, stock rotation, and ensuring proper storage conditions to preserve wine quality.
  • Establish relationships with wine suppliers and negotiate favourable pricing and terms for wine purchases.
  • Stay updated with industry trends, new wine regions, and emerging producers to continuously enhance the wine program.
  • Provide personalized wine recommendations to guests based on their preferences, budget, and menu selections.
  • Assist guests with wine selections, explaining the characteristics and qualities of different wines, and ensuring a memorable dining experience.
  • Collaborate with the management team to develop wine events, tastings, and educational programs for guests and staff.
  • Monitor and maintain wine service standards, ensuring proper glassware, decanting, and wine temperature.
  • Uphold and enforce all relevant licensing and legal requirements related to the sale and service of alcoholic beverages.
  • Contribute to financial management by monitoring wine costs, analysing sales data, and assisting in budgeting processes.

Qualifications:

  • Proven experience as a Head Sommelier or similar role in a high-end restaurant or luxury hospitality establishment.
  • Certification from a recognized sommelier program (e.g., Court of Master Sommeliers, WSET) is highly desirable.
  • Certification in Responsible Service of Alcohol (RSA) is required.
  • Extensive knowledge of global wines, including a comprehensive understanding of grape varietals, wine regions, and wine production.
  • Excellent palate and ability to discern flavours, aromas, and complexities of various wines.
  • Strong leadership skills with the ability to manage and inspire a team.
  • Exceptional communication and interpersonal skills to engage with guests, colleagues, and suppliers.
  • Outstanding organizational and time management abilities to ensure smooth operations of the wine program.
  • Ability to work in a fast-paced, high-pressure environment while maintaining composure and attention to detail.
