With extraordinary dining options, including Sokyo, BLACK Bar and Grill, Cucina Porto, and our vibrant Sports Bar where the action is live and loud, we are dedicated to delivering the ultimate entertainment, hospitality, and dining experiences for all.As our Junior Sous Chef in our Conference & Events team, reporting to the Chef de Cuisine Ben Lee, you will be a natural leader in the kitchen and bring the best out of the team.This is a fantastic opportunity where you will take good care of our guests ensuring that every dish that leaves the kitchen is consistent and delicious.A few of your responsibilities:

• Support the Chef de Cuisine and Sous Chefs in the day-to-day running of the department
• Ensure an open line of communication between the team, management and guests.
• Mentor and support the Demi's, Commis, Apprentices & Cooks in the team for retention and individual growth.
• Ensure consistency across every meal coming out of the kitchen

What are we looking for:

• Proven experience as a Chef and relevant tertiary qualifications, such as Certificate IV in Commercial Cookery
• Knowledge of a variety of high-volume cooking styles
• Strong understanding of produce, culinary techniques, and kitchen equipment
• Excellent communication and interpersonal skills
• Full working rights to commit to a minimum of 40 hours per week working varied shifts, including weekends, public holidays, late nights and early mornings
