We need a Pastrycook specializing in Lebanese cuisine with special knowledge of making Bakalavas, Knafeh, Ma’amoul, Qatayef etc.
In addition the Pastrycook will have the following responsibilities.
1. Preparing dough, cutting the required size, and shaping dough.
2. Rolling (using the traditional way with roller pin) , filling the pastries.
3. Preparing fillings for the pastries, scaling and using the proper amount of ingredients for the pastries
4. Preparing bread and baking (when needed)
5. Using Saaj (traditional “middle-eastern”hot plate to bake some breads, flat thin pizzas and pastries.
6. Creating and testing new recipes every while
7. Preparing veggies (cutting, chopping and slicing)
8. Decorating baked goods.
9. Ordering ingredients, stock control and organizing a pastry kitchen or station.
10. Maintaining a clean and safe work environment (surfaces, equipment, walls and floors
