Manager of Production Kitchen

Job Overview:

We are seeking an experienced and results-driven individual to join our team as the Manager of our Production Kitchen at our Moore Park site. The successful candidate will lead our culinary team in a high-volume Production Kitchen, overseeing all aspects of food preparation, quality control, and kitchen operations. As the Manager of Production Kitchen, you will play a key role in maintaining efficiency, upholding quality standards, and ensuring a seamless workflow within the culinary department.

Key Responsibilities:

1. Leadership and Team Management:

   - Lead, mentor, and inspire a team of chefs, cooks, and kitchen staff to deliver high-quality and consistent culinary creations.

   - Foster a positive and collaborative work environment, promoting teamwork and continuous improvement.

2. Menu Planning and Execution:

   - Collaborate with the culinary team to plan and execute a diverse and appealing menu, considering seasonality, trends, and dietary preferences.

   - Ensure the consistent and timely execution of menu items, maintaining high standards of presentation and taste.

3. Production Scheduling:

   - Develop and implement production schedules to meet customer demand while optimizing efficiency.

   - Coordinate with kitchen staff to ensure adequate staffing levels during peak production periods.

4. Quality Assurance:

   - Conduct regular quality checks on food products to ensure they meet established standards.

   - Implement and maintain hygiene and safety protocols in the kitchen.

5. Inventory Management:

   - Oversee inventory levels for ingredients and supplies, coordinating with procurement to ensure adequate stock.

   - Implement effective systems for minimizing waste and optimizing ingredient usage.

6. Cost Management:

   - Manage kitchen budgets, including food and labour costs.

   - Identify cost-saving opportunities without compromising on food quality.

7. Collaboration with Other Departments:

   - Work collaboratively with other departments, such as procurement, to ensure a seamless flow of ingredients and supplies.

   - Coordinate with catering or events teams to meet specific production requirements.

8. Training and Development:

   - Provide ongoing training to kitchen staff on culinary techniques, safety procedures, and sanitation standards.

   - Identify and nurture talent within the team, promoting professional growth.

Qualifications:

- Culinary degree or equivalent experience in a related field.

- Proven experience as a manager of a Production Kitchen or in a similar leadership role.

- Strong culinary skills and knowledge of diverse cuisines.

- Excellent leadership and interpersonal skills.

- Ability to work in a fast-paced environment and make decisions under pressure.

- Knowledge of food safety regulations and best practices.

- Familiarity with inventory management and procurement processes.

Key Performance Indicators (KPIs):

 - Monitor kitchen efficiency through timely delivery of dishes.

 - Track and reduce instances of quality deviations.

 - Evaluate and optimize production schedules for increased output.

-  Manage food and labour costs within specified budgetary limits. 

 - Implement strategies to minimize ingredient waste. 

-  Ensure compliance with food safety regulations.
