The Playford was originally built in 1998 and recently underwent a multi-million dollar refurbishment. Job Description
· Support the Executive Chef in all required day to day operational aspects of Luma's kitchen.
· Demonstrate a variety of culinary techniques and use these in the development of the culinary team.
· Maintain control procedures – food cost, labor and operating expenses.
· Maintain and monitor hygiene, health and safety standards; and monitor that Hazard Analysis and Critical Control Point (HACCP) regulations are adhered to.
· Strive to continually exceed guest expectations, enabling Luma to be recognised as a purveyor of consistent, excellent quality cuisine.
· Respond to any changes in food styles and service trends as dictated by the market.
· Cultivate a positive work environment where learning and personal development are benchmarks by which quality improvement is driven.
· Liaise with the Food and Beverage Department keeping the lines of communication open between departments.
· This role would be best suited to someone with some creativity and flair that is looking to progress their career in a 5 star environment.
Qualifications/ About You
· Relevant culinary trade qualifications.
· Experience in a hatted restaurant or 2 years of similar experience in a large 4-5 star Hotel is highly advantageous.
· Eager to push the boundaries of culinary excellence through innovation.
· A strong understanding of food cost and control and food safety requirements.
· Experience in managing and leading a large kitchen team.
· Strong product knowledge of menu items and seasonal ingredients.
· Knowledge of how to operate kitchen equipment safely.
