Debutant is looking for an enthusiastic and ambitious Sous Chef/Junior Sous Chef to join the team. We are a French Steakhouse in central Wollongong working closely with local beef producers to create dishes showcasing in-house dry aged beef. Operating from Wednesday to Saturday, we guarantee a regular 3 day weekend.
Position is expected to assist in running the kitchen during daily operations, including directing apprentices and monitoring prep.
All our proteins are cooked over a woodfire, so experience with grilling meat is preferred.
Responsibilities
- Day to day overseeing of opening and closing procedures
- Responsible for ordering and par levels of all produce
- To have full working knowledge and capability to supervise, correct and demonstrate all duties and tasks in the assigned station to the standard set.
- Ensure appealing plate presentation
- Slightly modify recipes to meet customers’ needs and requests (e.g. reduce salt, remove dairy)
- Monitor food stock and place orders
- Check freshness of food and discard out-of-date items
- Experiment with recipes and suggest new ingredients
- Ensure compliance with all health and safety regulations within the kitchen area
- To produce a consistent, high-quality product and provide a courteous, professional, efficient and flexible service at all times
Requirements
- Fluent English
- Minimum qualifications in Certificate III in Commercial Cookery
