Named after the iconic pintxo inspired by the 1946 film noir starring Rita Hayworth, Gildas is bringing a small taste of Basque Country to Sydney. Hastie’s new space showcases his passion for the Basque region, and signature use of simple ingredients that we know and love from Firedoor.
