Job Description

The Heritage Hotel of Gladstone are looking for a self-motivated chefs with the ability to join our team of chefs, cooks, kitchen hands and apprentices. The position is for a person with vision who tries to keep up with the latest food trends to bring a modern and rustic feel to the place. Our clientele are locals and tourists with high expectations of quality food.

With the addition of a second kitchen and function centre at the venue we are seeking to increase our kitchen team to expand our food offering for functions, private events and weddings.

Tasks and Responsibilities

• You will be required to developing New Recipes.
• monitoring quality of dishes at all stages of preparation and presentation
• discussing food preparation issues with Managers, kitchen and waiting staff
• If required have the ability to Manage Customer Relations with any major complaints of the food
• plan and organise the preparation and cooking of food
• demonstrating techniques and advising on cooking procedures
• preparing and cooking food
• Help to train kitchen staff in all areas of the kitchen in liason with head chef
• Study each recipe and gather all necessary ingredients
• Cook food in a timely manner
• Delegate tasks to apprentices, kitchen hands and cooks
• Inform wait staff about daily specials
• Ensure appealing plate presentation
• Supervise Cooks, apprentices, kitchen hands, assist as needed
• Slightly modify recipes to meet customers’ needs and requests (e.g. reduce salt, remove dairy)
• Check freshness of food and discard out-of-date items
• Experiment with recipes and suggest new ingredients
• Ensure compliance with all health and safety regulations within the kitchen area

Relevant experience and Qualifications

Qualifications 

AQF Certificate IV or AQF Certificate III including at least two years of on-the-jobtraining,  Qualifications will be looked at alongside experience.
