Penelope's is fun-dining, not fine dining. Bored with an increasing focus on just what is on the plate or in the glass, we're aiming to provide a fun and vibey venue where the tunes & service are just as enjoyable as the food & beverage. Cocktail Bartender & Section Waiter - you will have solid experience as a bartender and great knowledge of cocktails and spirits. You will also be an experienced Section Waiter with the ability to deliver a detailed sequence of service, all while maintaining a fun and neighbourly service style. Our management team, is rolling out training programs to help you grow and develop into the role. We are searching for someone who can follow direction and be organised their time to achieve complex cocktail prep and technique within a time frame when in the bar. A knowledge of young Aussie wines, spirits and cocktail creative experience is advantageous.
Head chef Bremmy Setiyoko (SMEG young chef of the year finalist 2023) & Exec chef Cuong Nguyen have created a produce-driven menu of scrumptious food; think roast chicken & garlic sauce, steamed coral trout with bone sauce and pork & prawn ravioli with a brown butter & sage sauce. The dining bar is fun too, you'll get a chance to watch the chefs cook and be served by Bremmy and the team. And the wine & cocktail list, crafted by Lee Potter Cavanagh, one of Australia's most esteemed booze experts, perfectly complements the menu. The cocktails are a particular highlight, employing much culinary technique to serve very creative and flavourful drinks.
The venue features 132 seats with a bustling open air balcony, a courtyard, a bar with three tiered backbar, and a restaurant with an open kitchen, cooking in-house dry aged steaks, beautifully grilled vegetables and some of Australia's finest seafood. While we said we don't want the focus to be just on the food & drinks, they are delicious with a team already in place with global experience and plenty of awards.
Our focus is on the enjoyment of our guests. We guarantee a fun filled room with engaging staff, delicious food & drink, bumping tunes & atmosphere, incredible views, and ultimately a memorable experience. In order to facilitate this, you will have a minimum of 1 year experience working a bar in a similar venue. Ideally you will also be able to demonstrate understanding of advanced cocktail technique, hopefully you know your Dave Arnold from your Dave Grohl.
