St George Leagues Club has a proud history and is home to over 120 staff & 25,000 members. It offers a 250 seat Brasserie, a coffee shop that are busy and vibrant areas within the Club and a Chinese Restaurant (contract caterer). The Club is integrally linked to the mighty St George- Illawarra Dragons.

This is truly an exciting time to be joining the Club, given the recent appointment of key personnel who are overseeing the growth and development of the Club’s facilities, structure and mission.

St George Leagues Club is seeking to expand its team with the employment of a Full-time Commis Chef to join our Jubilee Brasserie Kitchen Team.   

About the Role 
Reporting to the Executive Chef, the Commis Chef will be a part of a busy team in our Brasserie kitchen.  They must be a motivated team player who is reliable & have a passion for serving customers the very best.

Responsibilities within this role include (but are not limited to):

Food Preparation: 

  • Prepare and cook dishes according to the established recipes and standards.
  • Ensure that all ingredients are fresh and of high quality.
  • Portion control and plating of dishes.

Station Management:

  • Maintain cleanliness and organisation of the station, including regular cleaning and sanitization.

Quality Control:

  • Ensure that all dishes leaving the station are of high quality and meet the restaurant's standards.

Teamwork:

  • Collaborate with other members of the kitchen team to ensure smooth service and timely preparation of all orders.
  • Communicate effectively with other stations and chefs.

Adherence to Safety and Hygiene:

  • Follow all food safety and sanitation guidelines, including proper food handling, storage, and temperature control.
  • Maintain a clean and organised work area.

Speed and Efficiency:

  • Work efficiently to ensure that orders are prepared and served in a timely manner during service hours.

Problem Solving:

  • Handle any issues or challenges that arise in your station, such as equipment malfunctions or running out of ingredients.

Cost Control:

  • Minimise food wastage by using ingredients wisely and following portion control guidelines.
  • Monitor and report any issues related to food quality or inventory management.

Customer Service:

  • Be responsive to customer requests and special dietary requirements, if applicable.

Continuous Learning:

  • Stay updated on culinary trends, techniques, and new ingredients to improve your skills and knowledge.

Team Communication:

  • Maintain clear and open communication with the kitchen team and front-of-house staff to ensure a smooth dining experience.

The successful candidate in this role will have:

  • Certificate III in hospitality or commercial cookery
  • Experience in a similar role
  • TAFE Workplace Hygiene or Food Safety Supervisor Certificate or equivalent
  • A friendly and professional manner
  • Ability to multitask and work well under pressure
  • Have a positive attitude and a desire to progress in career
  • The ability to work a range of shifts, in particular weekends, evenings, public holidays and Dragons home games at Jubilee oval
  • The ability to lift up to 20 kilograms regularly
