Rydges World Square is an inner-city 458 room hotel seeking Commi and Demi Chefs. Our busy Food & Beverage Department includes Amber Restaurant, the popular Cidery Bar and seven conferencing and event spaces. Amber Restaurant is freshly renovated, focusing of the finest cuts of meats and the freshest of seafood, while sustainably Australian.
Qualifications & experience
- Ability to work a variety of shifts and flexibility with hours
- Previous hotel experience is preferable
- Experience working in a fast paced, high-pressure kitchen environment whilst leading a team in a friendly and comfortable atmosphere
Tasks & responsibilities
We are seeking Commi Chefs to join our team. We are looking for a leader to enhance our culinary offering and mentor a team of chefs to deliver exceptional experiences for our guests. Some of your responsibilities will be:
- Assisting Executive Chef with promotion of his culinary vision
- Liaise with other hotel departments to ensure exceptional guest experiences
- Maintain a high level of cleanliness and presentation, keeping all work areas both front of house and back of house clean and in working order
- Evaluate recipes to determine pricing for menu items, considering food, labor, and overhead expenses
- Prepare and cook various types of food in large quantities, either regularly or for special events.
- Based on customers' preferences develop the menu.
- Conduct inspections of facilities and equipment to ensure compliance with regulations.
- Requisition stock, materials, supplies, or equipment.
- Recruit and hire staff, including cooks and another kitchen worker.
- Schedule employee work hours by coordinating activities.
- Supervise and coordinate activities of cooks and workers engaged in food preparation.
- Demonstrate new cooking techniques and equipment to staff.
- Inspect supplies, equipment, and work areas to ensure conformance to established standards.
- Consult with customers to plan menus for special occasions..
- Enforce OH&S and hygiene regulations.
Education/Skills: Relevant Qualifications in Commercial Cookery
Salary: A$70,000 – A$75,000 plus Superannuation
Annual Leave: 4 weeks
Working Hours: 38 Hours per week
